Panama Abu Geisha Cascara Washed Lot GW-1214
Arrived a few months ago in vacuum packaging, a direct trade coffee. We just cracked the seal on the bag and have only 35 pounds to go around. This is an unusual coffee preparation, especially for a washed coffee. The coffee underwent a complex "Double Phase plus dry Geisha Cascara Maceration". Cascara is the dried out skin of coffee cherries which creates a tea-like drink. After, a two step process begins with fermentation of whole cherries and then they spend 72 hours in sealed (anaerobic) tanks macerating in Geisha Cascara 'juice'. The flavors are really different, combining significant florals with the sweet, geisha "tea" flavors from the Cascara.
